1. capitalized : a genus of aerobic gram-negative bacteria (family Enterobacteriaceae) producing acid and gas from many sugars (as dextrose and lactose), forming acetylmethylcarbinol, and being widely distributed in nature (as in feces, soil, water, and the contents of human and animal intestines) and often concerned in the natural souring of milk
